    Piccadilly Valley's cold climate - with its low-degree day summation, north-facing aspect and, of course, altitude--provides ideal conditions for this 100% Pinot Blanc des Noirs. This 2016 was hand-harvested and whole-bunch pressed, with the free-run juice drained to tank for settling. Settled juice was then fermented in tank, racked and blended before tirage. The wine was disgorged after two years on lees, with the liqueur d'expédition a blend of Ashton Hills' still Pinot Noir and 8 g/L dosage. It starts off all lifted and fruity, like your nose is buried a bowl of fresh cherry, strawberry and raspberry fruit, before subtle notes of damask rose and creamy, biscuity notes add complexity. The palate is bright and frothy and juicy (with less barrel-ferment complexity than the 'Salmon' Brut) yet with lees-aged and dosage-driven texture, sweet fruit and refreshing, natural acidity each playing their part. Terrific for the money.

    Ashton Hills is a three hectare, dry-grown vineyard that lies in the Piccadilly Valley subregion of the Adelaide Hills on a ridge just below the summit of Mount Lofty. The estate was founded by Stephen George in 1982 and since that time it has built a reputation as one of Australia’s finest proponents of Pinot Noir and cool climate whites.

    The Adelaide Hills, just 20 minutes drive from Adelaide CBD is one of Australia’s premier cool-climate wine growing regions. Benchmark wines abound; from the Pinot Noir and Chardonnay of Ashton Hills and Penfolds Bin ‘A’ offerings to the cutting edge lo-fi wines of the Basket Range, there is an impressive breadth to the regions diversity. But it’s not just home to the classics and the vinous avant-garde. Think racy Sauvignon Blanc, fine-boned, medium-bodied Syrah, wonderful Gruner Veltliner and some cracking examples of Nebbiolo and it’s clear that it is a region that is capable of covering many bases with aplomb. Local Knowledge: A lunch at the Summertown Aristologist is not to be missed.

    Hand-picked, whole-bunch pressed. Delicious fresh-cut strawberries and red cherries, when you taste the fruit you think it will be sweet, but it's not, it is utterly hedonistic, with further development on cork if you so wish.
