
This Pinot Gris style is more in line with modern Alsacian producers. The first and usually second pick is whole bunch pressed. The riper final batch is crushed before being pressed to juice. No sulphur is added at the press to allow juice to oxidise, and Lees and barrel fermentation brings complexity to the palate.
The wine has an extraordinarily high natural acidity, this is due to the high elevation of the vineyard. Food match - as Pinot Noir is to duck, Pinot Gris is to pork. It goes great with searingly spicy Thai and Vietnamese food.

Holly’s Garden has been a standout, value-packed label for what feels an eon – the wines hit my radar back in Best Cellars retailing days for sure. This variety and wine is given noble status by winemaker Neil Prentice, and rightfully so, gris in the right hands is sublime and the variety can sing with judicious winemaking approach to build complexity. This has lots of detail in winemaking and time on lees in barrel.
Superb example of proper gris. All slippery texture, chewiness and skinsy pucker, high floral perfume, some lushness whipped away on brisk acidity. There’s requisite pear character, some ripe apple, a slip of Parisian almond sweet-savouriness and good bitterness. Excellent length of flavour conspires with a general sense of compelling and good drinking. Geez this is good – proper, Proper Stuff.

Stir-fried Asian Water Spinach
with Shrimp Paste & Chilli
INCREDIENTS
3-4 tbsp oil (Peanut or Sunflower)
2 cloves of Garlic
1 long Red Chilli
250g Water Spinach trimmed
1 tsp Thai Shrimp Paste
4-5 green Thai Chillies chopped
METHOD
This is adapted from David Thompson's fantastic Thai Street Food book.
Using a pestle & mortar roughly pound the garlic with a pinch of salt.
Add the whole red chilli and lightly bruise.
Heat a seasoned wok over high heat and add the oil when smoking.
Add Greens, and stir-fry for 2-3 minutes.
Let down the shrimp paste in 2 tablespoons water, add and and simmer for 1-2 minutes.
Add the thai chillis, if the wok is getting too dry add a little more water.
Stir-fry for another 30 seconds and serve.
Serve with plenty of steamed Jasmine rice.
