
Estate grown and select parcels of Derwent Valley fruit grown on a mix of two terroirs, grey gravelly loams over clay and red loam over gravel. The majority of the fruit is biodynamically grown. The structure is fine because the wine is on skins for only a short time. 90% is aged in seasoned French oak for 10 months. The grapes are hand picked at around 13 Be. and fermented with own yeasts and some whole bunches. Basket pressed after about three weeks. Cellared underground over winter and spring. Prepared for bottling in late summer.
